Spinach Salad with Apple and Pomegranate
- ½ cup (120mL) honey Dijon dressing
- 2 apple, cored and coarsely chopped
- ½ cup (90g) pomegranate seeds
- ¼ cup (55g) chopped celery
- 6 cups (1350g) baby spinach leaves
- ¼ cup (30g) toasted pecans, coarsely chopped
1. Pour dressing over apples, pomegranate seeds, and celery in a large bowl. Mix lightly.
2. Add spinach and nuts. Toss and serve. Enjoy!
